POTATO SALAD 1
INGREDIENTS:
 | 2 LB red potatoes, boiled & cut to small chunks, skin on |
 | 1 fennel bulb, trimmed & sliced |
 | 2 bunches radish, sliced |
 | 1 red onion, thinly sliced |
 | 1/2 LB fresh green beans, blanched & cut into bit-size pieces |
 | 1/4 cup BACON
VINAIGRETTE |
 | Salt & pepper to taste |
 | 2 eggs, hard boiled & chopped |
 | 1/4 cup chopped fresh cilantro |
DIRECTIONS: Combine ingredients &
toss gently. Cover & refrigerate until cold.
SERVINGS: 6
SERVING TIPS: If preparing to take on a
picnic reserve the vinaigrette until ready to serve then add & toss
again. Requires little refrigeration as taste is best when just slightly
cooler than room temperature.
