POTATO SALAD 1

INGREDIENTS:

bullet2 LB red potatoes, boiled & cut to small chunks, skin on
bullet1 fennel bulb, trimmed & sliced
bullet2 bunches radish, sliced
bullet1 red onion, thinly sliced
bullet1/2 LB fresh green beans, blanched & cut into bit-size pieces
bullet1/4 cup BACON VINAIGRETTE
bulletSalt & pepper to taste
bullet2 eggs, hard boiled & chopped
bullet1/4 cup chopped fresh cilantro

DIRECTIONS:  Combine ingredients & toss gently.  Cover & refrigerate until cold.

SERVINGS:  6

SERVING TIPS:  If preparing to take on a picnic reserve the vinaigrette until ready to serve then add & toss again.  Requires little refrigeration as taste is best when just slightly cooler than room temperature.
