POTATO SALAD

INGREDIENTS:

bullet2 LB red potatoes, washed, eyed & cut into quarters
bulletGARLIC & ONION DRESSING
bullet1/2 cup (2 oz) grated parmesan cheese
bullet1/4 cup chopped fresh parsley or cilantro
bullet1/4 cup chopped roasted red bell pepper

DIRECTIONS:  Cook potatoes in a large pot of water 10-12 minutes or until tender.  Drain well & allow to cool in a large bowl.  Pour the dressing over the potatoes, toss gently to coat.  Add the cheese, parsley and peppers & toss again, gently to combine the spices, refrigerate until well chilled.

SERVINGS:  8                                       TIME:  30 minutes
