POTATO LATKES INGREDIENTS:
DIRECTIONS: Soak grated potatoes in the water 10 minutes, drain & squeeze dry using a clean towel. Add the garlic, flour, pepper, onion, eggs, salt & baking powder mixing well. Pour oil into a large heavy skillet to a depth of 1/8th inch & using medium heat. For each pancake portion 1/2 cup mixture into the skillet, flatten slightly & cook until golden then turn over, if necessary cooking until both sides are golden. Drain on paper towel & keep warm until ready to serve. SERVINGS: 4-6 TIME: 35 minutes POTATO LATKES |
