POTATO LATKES

INGREDIENTS:

bullet6 potatoes, peeled & grated into ice water
bullet1 onion, finely chopped
bullet1 clove garlic, crushed
bullet2 eggs
bullet3 Tbsp flour, potato starch or matzo meal
bullet1/2 tsp pepper
bullet1 1/2 tsp salt
bullet1/2 tsp baking powder
bulletoil for frying

DIRECTIONS:  Soak grated potatoes in the water 10 minutes, drain & squeeze dry using a clean towel.  Add the garlic, flour, pepper, onion, eggs, salt & baking powder mixing well.  Pour oil into a large heavy skillet to a depth of 1/8th inch & using medium heat.  For each pancake portion 1/2 cup mixture into the skillet, flatten slightly & cook until golden then turn over, if necessary cooking until both sides are golden.  Drain on paper towel & keep warm until ready to serve.
