POTATO KUGEL INGREDIENTS:
DIRECTIONS: Grate the potatoes into cold water then place in a clean towel & squeeze out the liquid. Peel & grate the onion, add broth, potatoes & onion to a bowl. Add the eggs, salt & flour. Mix ingredients until well blended. Heat the shortening in a baking pan in which you plan to bake the potato mixture. When melted, fold the shortening into the potato batter. Turn the batter into the greased baking pan. Bake for 35 minutes or until browned & crisp at the edges. SERVINGS: 6 TIME: 40-60 minutes SERVING TIPS: A favorite dish during Hanukkah. POTATO KUGEL |
