POTATO CASSEROLE 1

INGREDIENTS:

bullet6 potatoes, cooked & peeled
bullet2 cups cheddar cheese, shredded
bullet1/4 cup butter, melted plus 2 Tbsp
bullet1/3 cup green onion, chopped
bulletSalt & pepper to taste
bulletChopped parsley to taste
bullet2 cups sour cream, at room temperature

DIRECTIONS:  Coarsely shred potatoes.  Add cheese & melted butter.  Mix lightly then add onion, salt, pepper & sour cream.  Mix lightly.  Dot with additional butter & bake for 25 minutes at 350 F (176.67 C).

SERVINGS:  6-8                            TIME:  40 minutes
