PORCUPINE BALLS

INGREDIENTS:

bullet1 LB ground beef
bullet1/2 cup Italian seasoned bread crumbs
bullet1 egg
bullet3/4 tsp salt
bullet1/4 tsp paprika
bullet2 Tbsp finely chopped green bell pepper
bullet1/4 cup raw rice
bullet1 can (15 oz) tomato sauce, more if desired
bullet1 tsp chili powder

DIRECTIONS:  Combine beef, bread crumbs, egg, salt, paprika & bell pepper mixing well.  Form into balls then flatten to patties.  Roll in the rice & either leave in a patty or reform into a ball.  Combine tomato sauce & chili power & heat.  Add the meat, cover & simmer about 45 minutes.  Check & adjust seasoning.
