POLENTA

INGREDIENTS:

bullet3/4 cup polenta or cornmeal
bullet3 cups water
bullet1/2 tsp salt

DIRECTIONS: Combine ingredients in a 3 quart bowl.  Cover & microwave on high for 8 minutes.  Stir to blend the ingredients & cook covered another 2-3 minutes.

SERVINGS:  4                                        TIME:  15 minutes

SERVING TIPS: This recipe was prepared by Dick S in Palm Springs.  Polenta can be eaten soft, just after preparation or refrigerated until it becomes firm, slice into 1/4 inch slices & fried with a small amount of oil.
