PEPPER STEAK

INGREDIENTS:

bullet2 NY steaks (8 oz each)
bullet1 Tbsp black pepper corns, crushed
bullet1 Tbsp olive oil
bullet2 Tbsp butter
bullet1 Tbsp paprika
bullet3 green onions, chopped
bullet1 cup sliced fresh mushrooms
bullet3 cloves garlic, chopped
bullet1/4 cup cognac
bullet1/2 cup heavy cream
bulletSalt & pepper to taste

DIRECTIONS: Pound pepper corns into steak (place crushed pepper corns on the steak, cover with wax paper to keep the pepper from getting into the air), do on both sides.  Sauté steaks in oil to brown on both sides to medium rare.  Remove to a plate & cover to keep warm.  Add remaining ingredients except cream & sauté until soft & then add the cream, do not boil. Pour sauce over the steak & serve.

SERVING:  2                                TIME:  40 minutes
