PECAN WAFFLES

INGREDIENTS:

bullet1 3/4 cup cake flour
bullet2 tsp baking powder
bullet1/2 tsp salt
bullet1 Tbsp sugar
bullet3 egg yokes & 3 egg whites beaten stiff
bullet4-6 Tbsp melted butter
bullet1 1/2 cup milk
bullet3/4 cup pecans, coarsely chopped

DIRECTIONS:  Sift together the flour, baking powder, salt & sugar.  Add the egg yokes, butter & milk.  Combine in a few strokes then fold in the egg whites & pecans.  Cook in a waffle iron in batches keeping cooked waffles warm until ready to serve.

SERVES:  6

SERVING TIPS:  Serve with fresh fruit on top at breakfast or whipped cream for dessert or brunch.
