PEAR FRENCH TOAST

INGREDIENTS:

bullet1/4 cup + 3 Tbsp brown sugar, packed, divided
bullet6 Tbsp butter, divided
bullet1 1/4 tsp cinnamon, divided
bullet2 1/2 cup fresh pears, peeled & sliced
bullet3 eggs, beaten
bullet3/4 cup milk
bullet1 tsp vanilla
bullet1/4 tsp nutmeg
bullet6 slices French bread 1 inch thick
bulletVanilla ice cream, optional

DIRECTIONS:  Using a large skillet combine the sugar, 2 Tbsp butter, 1/4 tsp cinnamon cook until sugar is dissolved.  Add the pears & cook until tender then reserve the mixture.  In a bowl combine eggs, milk, vanilla, nutmeg, remaining sugar & cinnamon.  Dip bread into egg mixture to coat each side.  Melt the remaining butter in your skillet & fry the bread until golden brown on each side.  Top with the pear mixture & ice cream, if desired.  Serve warm.

SERVINGS:  6                                        TIME:  30 minutes

SERVING TIPS:  Great at breakfast (without ice cream) or at a brunch.  Not bad at all for an easy dinner served with a good salad.
