PEACH SOUP

INGREDIENTS:

bullet2 1/2 lb fresh peaches, peeled, pitted & sliced
bullet1/2 cup fresh orange juice
bullet1 tsp orange rind, finely grated
bullet1/2 cup Marsala wine
bullet1/4 cup sugar
bullet3 Tbsp cornstarch
bullet1/8 tsp ground cloves
bulletMint leaves, reserve for garnish

DIRECTIONS:  Using a blender process ingredients in batches to puree completely.  Pour mixture into a medium saucepan & bring to a slow boil.  Lower the heat & simmer stirring for 8 - 10 minutes or until soup is clear & thickens slightly.  Chill.  Serve very cold with fresh mint leaves.

SERVES:  4-6

SERVING TIPS:  You can use a 2 LB can of water packed peaches instead of the fresh peaches.
