ORANGE APRICOT CHICKEN

INGREDIENTS:

bullet2 large onions, thickly sliced
bullet12 oz can frozen orange juice concentrate, thawed
bullet1 cup apricot juice
bullet1 cup apricot jam
bullet1 cup dried apricots, plumped in hot water, drained
bullet3 LB skinless, boneless chicken cutlets
bullet1 orange, sliced for garnish

DIRECTIONS:  Preheat oven to 350 F (176.67 C).  In a large baking pan arrange the onion slices then mix together the orange & apricot juice jam & dried apricots.  Pour half of the liquid on top of the onions.  Arrange the chicken the chicken in the pan then top with remaining liquid.  Cover & bake 30 minutes.  Turn chicken over & bake 30 minutes.  Turn chicken again & bake uncovered 30 minutes more.  Garnish with orange slices & serve in the baking pan. 

SERVES:                                   TIME:  1 1/2 hour
