ONE PAN BREAKFAST INGREDIENTS:
DIRECTIONS: Using a 12 inch skillet cook the bacon until crisp. Remove & crumble. Drain all but 2 Tbsp of the bacon fat from the skillet. Add hash browns, bell pepper, green onion, salt & pepper, stir & cook 5 minutes. Flatten hash browns with spatula, pressing hash browns up sides & across bottom of skillet. Top with the bacon. Beat eggs & milk & pour over potato mixture then sprinkle with cheese. Cover skillet & cook over medium-low heat 8-10 minutes until eggs are set & cheese is melted. Loosen sides & slide onto serving plate. Sprinkle with chopped tomato & parsley. SERVES: 8 TIME: 30 minutes ONE PAN BREAKFAST |
