ONE PAN BREAKFAST

INGREDIENTS:

bullet1 LB bacon
bullet1 Pkg (1 LB 4 oz) frozen shredded hash brown potatoes
bullet1 bell pepper, coarsely chopped
bullet1/2 cup sliced green onion
bulletSalt & pepper to taste
bullet4 eggs
bullet2 Tbsp milk
bullet8 oz shredded cheddar cheese
bullet1 tomato, chopped
bullet1/4 cup chopped parsley or cilantro

DIRECTIONS:  Using a 12 inch skillet cook the bacon until crisp.  Remove & crumble.  Drain all but 2 Tbsp of the bacon fat from the skillet.  Add hash browns, bell pepper, green onion, salt & pepper, stir & cook 5 minutes.  Flatten hash browns with spatula, pressing hash browns up sides & across bottom of skillet.  Top with the bacon.  Beat eggs & milk & pour over potato mixture then sprinkle with cheese.  Cover skillet & cook over medium-low heat 8-10 minutes until eggs are set & cheese is melted.  Loosen sides & slide onto serving plate.  Sprinkle with chopped tomato & parsley. 

SERVES:  8                                TIME:  30 minutes
