OKRA SALSA

INGREDIENTS:

bullet3 cups water
bullet1 onion, finely chopped
bullet2 cloves garlic, minced
bullet1 tsp salt, or to taste
bullet1/2 tsp cayenne pepper
bullet1/2 tsp white pepper
bullet 1 LB fresh okra, trimmed, cut into 3 pieces

DIRECTIONS:  Bring water to a boil, add onion, garlic, salt, cayenne & pepper.  Return to a boil & add okra, boil until liquid is almost evaporated, about 15 minutes.  Using a sieve, drain & rinse under cold water, drain well.  Refrigerate 1 hour, mixing a couple times.  Serve cold.

SERVINGS:  2 cups

SERVING TIPS:  Do not prepare more than 6 hours in advance.
