MOROCCAN CARROTS

INGREDIENTS:

bullet1 LB baby carrots, shredded
bullet1/2 cup apricot nectar
bullet1 Tbsp butter
bullet1/3 cup slivered almonds, toasted
bullet1/4 tsp ground allspice
bullet1/4 tsp cumin
bulletSalt & pepper to taste

DIRECTIONS: Combine ingredients in a sauce pan except the almonds & bring to a boil.  Cover & reduce the heat to a simmer & cook 2-3 minutes.  Uncover & cook an additional 2-3 minutes or until liquid is almost evaporated.  Just before serving toss with the almonds.
