MONTE CRISTO SANDWICH

TOOLS YOU WILL NEED:  Pie pan, wire whisk, measuring spoons, knife for cutting, two skillets, spatula, large wooden spoon for stirring chard.

INGREDIENTS:

bullet4 oz thinly sliced ham
bullet8 oz thinly sliced smoked ham
bullet4 oz thinly sliced Swiss cheese
bullet8 oz thinly sliced muenster cheese
bullet4 slices sourdough (or French) bread 1/2-inch thick
bulletDijon mustard to  taste
bulletThinly sliced red onion
bulletPowdered sugar to taste
bullet2 eggs
bullet1/4 cup milk
bullet1/4 tsp crushed dried thyme
bullet1/4 tsp pepper
bullet1/4 tsp salt
bullet1/4 tsp hot pepper sauce
bullet2 Tbsp butter

CHARD:

bullet1 apple, cored, chopped
bullet1 bunch red chard, stalks separated from leaves both chopped
bullet2 tsp butter
bullet2 tsp canola oil
bullet1/2 tsp sugar
bullet1 Tbsp balsamic vinegar

DIRECTIONS:  For the sandwiches, spread two slices of bread with mustard then layer the turkey then Swiss cheese, onion, ham, muenster cheese for each sandwich & top each with the second piece of bread.  Beat eggs in a pie plate with the milk, thyme, salt, pepper & pepper sauce.  Melt butter in electric skillet set at 300 F.  Place sandwiches in egg mixture, turn to coat both sides.  Transfer to skillet.  Pour any remaining egg mixture over sandwiches.  Cook until well browned on one side, about 5 minutes, turn & cook until cheese has melted, about 5 minutes.  Meanwhile melt the chard butter with oil in a large non-stick skillet.  Add apples & chard stems.  Cook, stirring until apples color & chard stems soften, about 5 minutes.  Stir in chard leaves, cook until wilted, about 2 minutes.  Drizzle with vinegar.  Sprinkle the sandwiches with powdered sugar & cut sandwiches into triangles, serve chard mixture on the side.

SERVING TIPS:  The Monte Cristo sandwich is a cross between French toast & a grilled cheese sandwich; it is rich & savory, best eaten with a knife & fork.  Our version sides the sandwich with apples & red chard.  This meal goes well with FRUIT SALAD.
