INGREDIENTS:
 | 6 medium flour tortilla's (can also use pita
bread) |
 | 1 can (15 oz) Mexican-style chopped tomatoes,
drained |
 | 1 can (15 oz) refried beans |
 | 2 cans (4 oz) chopped green chilies, drained |
 | 1/2 cup finely chopped onion |
 | 3 Anaheim chilies, roasted, seeded, peeled &
cut into strips |
 | 1 1/2 cup shredded mozzarella cheese (or use
shredded Mexican flavored cheddar cheese |
DIRECTIONS: Preheat oven to 350 F.
Divide ingredients into 6 equal portions. Layer tortilla's with beans,
tomato, onion, green chilies then top with Anaheim chilies. Bake 10-12
minutes or until cheese is melted & ingredients are hot.
