TOOLS YOU WILL NEED: Large mixing bowl, measuring cup & spoons, kitchen knife, large baking pan or roasting pan, basting brush. INGREDIENTS:
DIRECTIONS: In a large bowl, combine all ingredients except bacon & about half of the BBQ sauce. Slowly fold in all ingredients & shape meat into a loaf. Place loaf in a deep baking pan. Wrap loaf with bacon strips in a crisscross fashion until entire loaf is covered. Spread remaining BBQ sauce over entire loaf & place in a refrigerator for 2 hours. Preheat oven to 350 F. Place meatloaf on top rack & bake uncovered for 1 hour or until done. Baste meatloaf every 5 minutes with pan drippings for the last 15 minutes of cooking time. Remove from the oven, drain off excess fat & allow to rest for 15 minutes before serving. SERVINGS: 15 TIME: 1 hour 30 minutes plus resting MEATLOAF 4 |
