MEAT LOAF 2

INGREDIENTS:

bullet1 1/2 LB BASIC HAMBURGER
bullet1 cup chopped cooked shrimp
bullet1 can (13.5 oz) pineapple chunks, drained, liquid reserved
bullet1 Tbsp soy sauce
bullet1/3 cup vinegar
bullet1/2 bell pepper, seeded & thinly sliced

DIRECTIONS:  Combine shrimp with basic hamburger mixing well.  If more moisture is desired add a small amount of dry vermouth.  Shape into a loaf & bake in a loaf pan at 350 F for 40-50 minutes or until juices run clear & meat is done.  Meanwhile combine pineapple liquid, soy sauce & vinegar in a pan & cook, stirring until it begins to thicken & boils.  Add the pineapple & bell pepper strips & cook until heated.  Slice the meatloaf into large slices & pour the mixture over the meatloaf.
