MAPLE CHICKEN SALAD

INGREDIENTS:

bullet1/2 cooked chicken
bullet1 bag prepared broccoli-cole slaw (from the deli)
bullet1 can (15 oz) black eyed peas, rinsed & drained
bullet1/3 cup maple syrup
bullet1/3 cup cider vinegar
bullet1/3 cup olive oil
bullet1/2 tsp Dijon or other mustard
bulletSalt & pepper to taste
bullet1/2 cup smoked almonds

DIRECTIONS:  Skin & bone the chicken then chop fine, should be at least 1 1/2 cups.  Toss together the slaw, chicken & pea's.  Whisk together syrup, vinegar, oil, mustard & salt-pepper.  Pour over the chicken salad & toss to coat well.  Place on serving plates & top with the almonds.
