LOBSTER TACOS

TOOLS YOU WILL NEED:  Microwave; 2 small bowls; spoons; fork; knife & clean-up materials.

INGREDIENTS:

bullet2 1/2 oz cooked lobster meat, shredded
bullet1 tsp MANGO SALSA, or salsa of choice (see SALSA)
bullet2 tsp GUACAMOLE
bullet2 drops of fresh lime juice
bullet1 Tbsp sour cream
bullet1 Tbsp shredded fresh spinach
bullet1 tsp shredded Monterey Jack cheese
bullet1 tsp finely chopped green onion
bullet1 corn tortilla, warmed

DIRECTIONS:  Combine lobster & salsa & warm in the microwave.  Combine lime juice & sour cream.  Layer the center of the taco shell with lobster, guacamole, cheese, onion, spinach & top with sour cream.  Bring sides up & enjoy.

SERVINGS:  1                                                TIME:  5 minutes

SERVING TIPS:  To increase the servings simply keep doubling the recipe.  Recipe is really good served with CUCUMBER SALAD.
