LIVER & ONIONS

INGREDIENTS:

bullet1 LB calves liver
bulletSalt & pepper to taste
bulletFlour as needed + 2 Tbsp
bullet1/4 cup + 2 Tbsp butter or margarine
bullet2 onions, peeled & sliced thin
bullet3/4 cup + 2 Tbsp beef broth
bullet3/4 cup sour cream

DIRECTIONS: Dredge liver in salt, pepper & flour then cook in 2 Tbsp butter just until it losses its pink color DO NOT OVER COOK.  Melt 1/4 cup butter in the skillet, add onion & sauté until lightly browed then sprinkle with 2 Tbsp flour, stirring to coat well.  Cook 1 minute.  Add beef broth & cook stirring constantly until thickened.  Add liver & simmer 2 minutes.  Remove from heat & put liver on a serving plate.  Add sour cream to the skillet, mix well simmering a short time (less than a minute).  Mix well & top over the liver.

SERVINGS:  4                                        TIME:  30 minutes

SERVING TIPS:  Great with pasta.
