LINGUINE & CHEESE SAUCE

INGREDIENTS:

bullet1 Pkg (7 oz) linguine
bullet2 Tbsp butter
bullet3 Tbsp flour
bullet1/4 tsp salt
bullet1/8 tsp pepper
bullet1 1/2 cup milk
bullet3/4 cup (6 oz) shredded mozzarella cheese
bullet1/4 cup shredded fresh parmesan cheese
bullet2 Tbsp fresh lemon juice

DIRECTIONS:  Cook linguine according to package directions.  Meanwhile in a skillet over low heat melt butter, stir in flour, salt & pepper stirring until smooth.  Gradually stir in milk & bring to a boil stirring for 2 minutes or until thickened.  Remove from the heat.  Combine cheeses & gently toss in the lemon juice.  Add to the sauce, stir until cheese begins to melt.  Drain linguine & add to the cheese sauce, toss to coat.
