LEMON TOMATO SALSA
INGREDIENTS:
 | 3 tomatoes, diced into 1/4 inch chunks |
| 1 cup fresh basil leaves, chopped coarsely |
| 1/4 cup Greek olives, chopped |
| 1/2 tsp lemon zest (grated yellow rind) then cut lemon in half |
DIRECTIONS: remove the rind from half of the lemon, reserve the other half for other use. Separate the lemon into sections, remove seeds & coarsely chop. Combine all ingredients mixing well.
SERVINGS: 2 cups TIME: 20 minutes
SERVING TIPS: Great on chicken or lamb.
