LEMON PILAF
INGREDIENTS:
 | 1 cup finely chopped onion |
 | 1 clove garlic, finely chopped |
 | 1/4 cup butter or margarine |
 | 1 cup uncooked rice |
 | 2 cups water |
 | 2 tsp instant chicken bouillon |
 | 2 tsp lemon zest |
 | 1/2 tsp salt |
 | 1/4 tsp dry mustard |
 | 1/8 tsp Tabasco sauce |
 | 2 stalks celery, finely chopped |
 | 2 Tbsp chopped parsley |
DIRECTIONS: Sauté onion & garlic
with butter in a 3 quart sauce pan until onion is tender, do not let garlic
brown. Stir in rest of ingredients, except parsley. Heat to a boil
stirring occasionally then reduce to a simmer, cover & cook 12-14
minutes. Remove from hat, stir in parsley lightly with a fork, cover &
let steam 5-10 minutes.
