LEMON PILAF

INGREDIENTS:

bullet1 cup finely chopped onion
bullet1 clove garlic, finely chopped
bullet1/4 cup butter or margarine
bullet1 cup uncooked rice
bullet2 cups water
bullet2 tsp instant chicken bouillon
bullet2 tsp lemon zest
bullet1/2 tsp salt
bullet1/4 tsp dry mustard
bullet1/8 tsp Tabasco sauce
bullet2 stalks celery, finely chopped
bullet2 Tbsp chopped parsley

DIRECTIONS:  Sauté onion & garlic with butter in a 3 quart sauce pan until onion is tender, do not let garlic brown.  Stir in rest of ingredients, except parsley.  Heat to a boil stirring occasionally then reduce to a simmer, cover & cook 12-14 minutes.  Remove from hat, stir in parsley lightly with a fork, cover & let steam 5-10 minutes.
