LEMON COOKIES INGREDIENTS:
DIRECTIONS: Using a mixing bowl cream butter then add honey in a small stream mixing. Beat in the egg yolk, lemon rind & juice. In a separate bowl combine flour & baking powder. Gradually stir into the butter mixture then stir in the almonds. Cover & chill for 1 hour. Shape your dough into small balls & arrange on cookie sheet that you have sprayed with pan spray keeping about 2 inches apart. Brush lightly with the beaten egg white. Bake at 350 F (176.67 C) for 10-15 minutes or until done. Cool on a wire rack & store in a covered container. SERVINGS: about 4 dozen LEMON COOKIES |
