LEG OF LAMB 2

INGREDIENTS:

bullet5-6 LB leg of lamb
bullet1 Tbsp black pepper
bullet2 tsp salt
bullet1 tsp rosemary leaves
bullet1/2 Tbsp thyme
bullet2-3 garlic cloves, slivered
bullet2 Tbsp olive oil

DIRECTIONS:  Combine pepper, salt, rosemary & thyme in a bowl.  Make incisions evenly over the roast & insert the garlic slivers into the incisions.  Rub the roast with oil then the combined seasoning all over.  Place in a roasting pan & allow to sit at room temperature for about 30 minutes.  Place the roast in a 450 F (232.22 C) oven for 10 minutes.  Turn the roast over & cook another 10 minutes.  Reduce heat to 250 F (121.11 C) & bake until internal temperature reaches 130 F.  Remove the roast from the oven & allow to rest for at least 20 minutes keeping warm under foil.  Serve.
