KIFTA 

INGREDIENTS:

FOR THE ROLL

bullet2 LB ground lamb
bullet1 onion, finely chopped
bullet1 cup parsley, finely chopped
bullet2 1/2 tsp salt, or to taste
bullet1 1/2 tsp pepper
bullet1 1/2 tsp allspice
bulletCinnamon to taste

FOR THE POTATOES

bullet4 medium potatoes
bullet4 medium tomatoes
bullet1 large onion, sliced
bullet1 cup tomato juice
bulletSalt & pepper to taste
bulletAllspice to taste

DIRECTIONS: To make kifta, mix all ingredients very well.  mold portions of the kifta into 8 rolls 3 inches lengthwise & place in a greased baking pan.  Peel & cut potatoes into 1/2 inch slices & spread over meat.  Cut tomatoes into 1/2 inch slices & spread over potatoes.  Spread sliced onions over tomatoes & add tomato juice & potato seasoning.  Bake in preheated oven 450 F (232.22 C) for 45 minutes.  Serve hot.
