IRISH OMELET INGREDIENTS:
DIRECTIONS: Use enough oil to cover the surface of a skillet & heat over medium heat. Use 1/2 cup of egg mixture, 1 tsp milk & salt & pepper to taste. Pour into the skillet. Cook lifting edges to allow uncooked portions to flow under. When almost set spoon 1/4 of the mushroom scallion filling over half the omelet. Fold the other half over the filling, cook a minute more & slide onto serving dish. Serve warm. SERVINGS: 4 IRISH OMELET |
