HUEVOS RANCHEROS

TOOLS YOU WILL NEED:  Measuring spoon, skillet, warm serving plates, tablespoons, spatula & bowls to hold salsa & beans.

INGREDIENTS:

bullet2 Tbsp olive oil
bullet4 corn tortillas, taco size
bullet4 eggs
bulletREFRIED BEANS warmed
bulletSALSA of choice, warmed

DIRECTIONS:  Using a large heavy skillet heat 1 Tbsp oil over medium heat.  Add tortilla's one at a time cook about 5 seconds per side or until just soft & remove to serving plates.  Spread refried beans over each tortilla.  Add remaining oil to skillet & cook eggs one at a time until "over easy".  Place 1 fried egg on each tortilla, top with salsa & serve warm.
