HOT TURKEY SANDWICH

INGREDIENTS:

bullet1/2 cup butter (1 stick)
bullet4 Tbsp flour
bullet1/2 tsp salt
bulletPepper to taste
bullet1 1/2 cups whipping cream
bullet1 cup milk
bullet2 egg yolks, slightly beaten
bullet1/2 cup grated Parmesan cheese
bullet8 slices wheat bread, toasted
bullet16 slices turkey, about 1 1/2 lbs, or more to taste
bullet2 tomatoes, sliced into 8 slices
bullet1/4 cup shredded Gruyere cheese
bullet16 strips of crisp cooked bacon

DIRECTIONS:  Melt butter in a saucepan.  Stir in flour, cook, stirring occasionally, until fragrant, about 3 minutes.  Season with salt & pepper.  Add cream & milk, cook over medium heat, stirring until thick, about 10 minutes.  Stir three tablespoons of the hot mixture, a tablespoon at a time, into egg yolks.  Stir egg yolk mixture into the saucepan mixture.  Stir to combine; remove from heat.  Stir in Parmesan cheese.  Heat broiler.  Arrange 8 toasted bread slices on a baking sheet; top with turkey, tomato slices, Gruyere cheese & white sauce.  Broil until sauce bubbles, about 5 minutes; top each slice with two bacon strips.

SERVING TIPS:  Serve with GARLIC MASHED POTATO 2 & GREEN SALAD
