HOT PASTA SALAD

INGREDIENTS:

bullet6 Tbsp extra virgin olive oil
bullet1/4 cup sliced Spanish olives
bullet4 garlic cloves, thinly sliced
bullet2 Tbsp chopped fresh oregano
bullet3 Tbsp balsamic vinegar
bullet12 oz cooked, hot penne pasta
bulletSalt & pepper to taste
bullet2 baskets of cherry tomatoes, cut in half
bulletGoat cheese to taste

DIRECTIONS:  Using a large skillet heat oil & stir in garlic, cook until barely golden, about 1 minute.  Add vinegar & bring to a boil then remove from the heat.  Stir in the tomatoes, olives & oregano.  Place pasta in a large bowl & add mixture, toss to combine.  Season with salt & pepper to taste.  Serve & add goat cheese to top, if desired.
