HOT DOG SALAD
INGREDIENTS:
 | 8 hot dogs, boiled & drained |
 | 1 can (15 oz) kidney beans, rinsed & drained |
 | 1 can (15 oz) small white beans, rinsed & drained |
 | 1 can (15 oz) chick peas, rinsed & drained |
 | 1/3 cup vinegar |
 | 4 green onions, chopped |
 | 1/4 cup olive oil |
 | 1/4 cup green bell pepper, chopped |
 | 3-4 ribs celery, finely chopped |
 | 2 Roma tomatoes, cut into wedges |
 | Salt & pepper to taste |
 | Chopped fresh parsley to taste |
DIRECTIONS: Cut hot dogs into 1/4-1/2
inch slices. Combine all ingredients except the tomato in a large bowl
& toss to coat & mix well. Serve with tomatoes on top of each
serving.
SERVINGS:

TIME: 20 minutes
SERVING TIPS: Great on a hot day, easy
to make. Try placing in a plastic container with a lid with the tomato on
top for an easy lunch to send the kids to school with, don't forget to include a
plastic fork & some crackers.
