HONEY CAKE
INGREDIENTS:
 | 1 cup honey |
| 1 cup oil |
| 2 tsp instant coffee, dissolved in 1/4 pint boiling water |
| 1 1/4 cup dark brown sugar |
| 4 eggs |
| 4 cups self-rising flour |
| 1 1/8 tsp cinnamon |
| 1 tsp ground ginger |
| 1 tsp bicarbonate of soda |
DIRECTIONS: Combine the honey, oil, coffee & sugar mixing well. Beat in the eggs then the rest of the ingredients. Bake in a greased shallow tin at 325 F (162.78 C) for 1 hour 15 minutes or until toothpick inserted comes out clean.
SERVINGS: 8 TIME: 1 hour 30 minutes
