HERB POTATOES

TOOLS YOU WILL NEED:  Large pot, measuring cup & spoons, brush for cleaning potatoes, kitchen knife, large wooden spoon & spatula.

INGREDIENTS:

bullet3 LB baby red potatoes
bullet2 Tbsp olive oil
bullet4 crushed garlic cloves
bullet1/4 cup minced fresh basil
bullet1/4 cup minced fresh Italian parsley
bullet1/4 cup butter
bulletSalt & pepper to taste
bulletParmesan cheese to taste
bulletMint leaves for garnish, optional

DIRECTIONS:  Clean & dry the potatoes, remove a thin strip of peel from around the centers of the potatoes.  Cook potatoes in a large pot with salted boiling water until tender, about 20 minutes.  Drain well then return to the empty pot or a large heavy skillet.  Using medium high heat add the oil, garlic, parsley & basil.  Cook stirring constantly until the potatoes are light golden brown & garlic is fragrant, about 5 minutes.  Do not let the garlic burn.  Add the butter & parmesan cheese, salt & pepper to taste, stirring to coat well.  Serve with mint leave, if desired.
