INGREDIENTS:
 | 2 cans hearts of palm, drained & rinsed for 2
minutes |
 | 2 cucumbers, seeded & sliced |
 | 4 medium tomatoes, seeded & chopped |
 | 1 red onion, chopped |
 | 1/2 bunch Italian parsley, minced |
 | Salt & pepper to taste |
 | 1/4 cup olive oil |
 | 3 Tbsp rice vinegar |
DIRECTIONS: Chop hearts of palm, cucumber
& tomatoes into 1/2-inch pieces. Combine in a bowl & toss with
parsley, salt, pepper, oil & vinegar. Chill.
