HAWAIIAN BREAD

INGREDIENTS:

bullet1 cup butter, softened
bullet2 cups sugar
bullet4 eggs
bullet1 cup mashed ripe banana
bullet4 cups flour
bullet2 tsp baking powder
bullet1 tsp baking soda
bullet3/4 tsp salt
bullet1 can (20 oz) crushed pineapple, undrained
bullet1 cup flaked coconut

DIRECTIONS:  Beat butter with an electric mixer until light & fluffy.  Gradually beat in sugar until light.  Add eggs, beat well.  Stir in banana.  Combine flour, baking powder, baking soda & salt.  Add to butter mixture, mixing just until smooth.  Fold in pineapple & coconut.  Spoon batter into 2 greased & floured 9 x 5 loaf pan.  Bake in a preheated 350 F oven until a toothpick inserted in the center comes out clean, about 60-70 minutes.

SERVINGS:  About 20 slices                        TIME:  1 hour, 20 minutes
