HAM & POTATO CASSEROLE

INGREDIENTS:

bullet4 potatoes, boiled, pealed & cooled
bullet4 eggs, hard boiled, coarsely chopped
bulletButter
bulletSalt to taste
bulletPaprika to taste
bulletBread crumbs
bullet1 pt sour cream, or more to taste
bulletThinly sliced ham (can use pepperoni or turkey)

DIRECTIONS:  Lightly butter a large casserole & preheat the oven to 325 F.  Slice the eggs & potatoes into thin rounds & layer the casserole with potato, egg, salt, paprika & some sour cream.  Then some of the sliced ham.  Continue making layers ending with potato on top.  Combine the bread crumbs with some melted butter & spread on top.  Bake for 1 hour or until a nice golden brown.
