HAMANTASHEN

INGREDIENTS:

bullet4 cups flour
bullet4 eggs
bullet3/4 cup sugar
bullet1 cup margarine, softened
bullet1 Tbsp orange juice
bullet2 tsp baking powder
bullet1 tsp vanilla extract
bulletpinch of salt
bullet1 tsp orange rind

FILLING

bullet1 LB strawberry or apricot preserves

DIRECTIONS:  Preheat oven to 350 F (176.67 C).  Grease cookie sheets.  Combine all ingredients, less filling, in bowl & using a mixer beat together.  To obtain the best consistency add either juice or flour in very small quantities.  Roll dough into a ball.  Divide into four parts.  On a floured board roll out each to about 1/8" thick.  Use a cookie cutter to cut into 3" circles.  Place 1/2 to 2/3 tsp of filling in the center.  Shape into a triangle, lift up right & left sides, leaving both sides to meet at the center above the filling.  Bring the top flap down to the center to meet the two sides.  Pinch edges together.  Place on greased cookie sheet & bake for 20 minutes or until golden brown.

SERVING TIPS:  Put a drop of food coloring into dough for the kids.  The filling can be mixed, preserves above or prune butter & poppy seeds.
