HALF & HALF CHALLAH

INGREDIENTS:

bullet3 oz fresh yeast
bullet1 cup warm water
bullet8 cups white flour
bullet6 cups whole-wheat flour
bullet2/3 cup sugar
bullet1 cup oil
bullet2 Tbsp salt
bullet4 eggs, slightly beaten
bullet3 cups warm water

GLAZE

bullet1 egg yolk, beaten
bullet1 tsp water
bulletpoppy seeds

DIRECTIONS:  In a small bowl dissolve yeast in 1 cup warm water & set aside.  Put white & wheat flours in a large bowl, make a well in the center adding sugar, oil, salt & eggs.  Add 3 cups warm water & the yeast mixture.  Mix & knead until smooth, about 5-10 minutes.  Place in a greased bowl & oil the top of the dough lightly.  Cover & let it rise in a warm place for 2 hours.  Punch down, knead again 2-3 minutes, oil as before & let rise 1 hour.  Separate challah with a blessing.  Divide dough into five pieces, shape each & put in greased pan.  Cover & let rise 1 hour.  Preheat oven to 350 F (176.67 C).  Brush loaves with egg glaze (combine egg yolk & water) & sprinkle with poppy seeds.  Bake for 45 minutes or until brown.  Remove & cool on a rack.
