GRILLED POTATO & VEGETABLES

INGREDIENTS:

bullet12 small red potatoes, washed & eyed
bullet24 pearl onions, trimmed
bullet1/2 LB fresh spinach (see HOW TO WASH SPINACH)
bullet1/4 cup chopped fresh sage
bullet1/3 cup olive oil
bullet6 carrots, washed & cut into medium-large sticks
bullet1 tsp red pepper flakes
bulletSalt & pepper to taste
bulletHeavy duty aluminum foil for wrapping

DIRECTIONS:  Combine ingredients in a large bowl tossing to well coat the vegetables.  Make 6 packages from the foil.  Divide the potatoes mixture among the 6 foil packages & pull the edges of the foil up to seal the potatoes well.  Place the foil packs on the edges of your grill & cook for about 25-30 minutes, checking to make sure the potato is done.  The center of the grill is free to cook your meat and timed right everything is done at once.  Serve the foil packs (open at time of eating).  Can be prepared in the oven.
