GRILLED EGGPLANT SANDWICH INGREDIENTS:
DIRECTIONS: Cut eggplant crosswise into 3/4 inch slices. In a shallow baking dish combine oil, thyme, 1/4 pepper, 1/8 tsp salt & mix well. Add egg plant slices, mix to coat & allow to marinate 1 hour. Heat grill & place peppers over the grill & cook 5-6 minutes, turning to insure all sides are charred. Put peppers in a plastic bag & let sit 5 minutes. Remove skin from pepper (under running cold water) then cut each into 4 pieces, removing seeds & veins. Set aside. Put eggplant on the grill & cook 5-6 minutes or until golden brown, turn & grill another 5-6 minutes. Don't overcook, the center should be soft. Cut each of the 6 slices of bread in half lengthwise & grill until slightly toasted. Spread half the slices with equal portions of cheese, add the eggplant, peppers & lettuce. Serve.
