GRILLED CHICKEN

INGREDIENTS:

bullet4 boneless, skinless half chicken breast
bullet1/2 cup soy sauce
bullet 2 tsp brown sugar
bullet1/2 cup rice wine
bullet1 Tbsp sesame oil
bullet1 Tbsp scallions, chopped
bullet1 1/2 ginger root, peeled & minced

DIRECTIONS:  Combine all ingredients except chicken in a plastic bag then add chicken.  Toss to well coat & refrigerate at least 1 hour (4 is best) to marinate.  Turn the bag several times during this period.  Remove the chicken & grill on hot coals 3-4 minutes per side until cooked.  Meanwhile take marinade & bring to a boil, stirring often.  Serve chicken with marinade to dip or pour over the chicken.

SERVINGS:    4                                TIME:  20 minutes plus marinade

SERVING TIPS:  Serve on a bed of steamed rice.
