GRILLED CATFISH

INGREDIENTS:

bullet4 catfish (8 oz each) cleaned, head, skin & fins removed if desired
bullet4 tsp olive oil
bullet3 tsp Dijon mustard
bullet2 tsp lemon juice
bullet2 tsp pepper
bullet1/4 tsp salt, or to taste

DIRECTIONS:  Cover the grill with foil.  Rinse fish & dry with paper towels.  Sprinkle cavities with salt & pepper.  Combine oil, mustard, & lemon juice.  Rub the outside with the oil mixture.  Grill about 10 minutes turning only once, until fish is done & fish is opaque & flakes easy.

SERVES:  4                                TIME:  20 minutes
