GREEN BEAN SOUP

INGREDIENTS:

bullet1 Tbsp olive oil
bullet3/4 cup carrots, chopped
bullet2 cloves garlic, chopped
bullet2 cups penne pasta
bullet1/2 tsp dried basil
bullet1 onion, chopped
bullet1/2 cup soy, chopped
bullet8 cups chicken broth
bullet1 LB fresh green beans
bullet1 oz pushito, cut into slices (see your butcher)
bulletSalt & pepper to taste
bulletParmesan cheese to taste

DIRECTIONS:  Using a 5 quart sauce pan sauté the garlic, carrots & onion in oil, about 3-5 minutes or until onion is slightly limp.  Add broth & bring to a boil, add pasta & while stirring cook 7 minutes.  Add the beans & cook until tender, about 5 minutes.  Add basil & stir to mix.  Serve in bowls topped with pushito, cheese, salt & pepper. 

SERVINGS:  4                                        TIME:  25 minutes

SERVING TIPS: You must have a crusty bread & red wine.
