GRASSHOPPER PIE

INGREDIENTS:

bullet28 chocolate sandwich cookies
bullet1 cup plus 3 Tbsp milk
bullet1 box (3 oz) instant vanilla pudding
bullet1/4 cup creame de mint or peppermint schnapps
bullet2 cups frozen whipped topping, thawed

DIRECTIONS:  Process 20 cookies in a blender until crushed, add 2-3 Tbsp milk, enough so cookies begin to hold together.  Place into a 9" pie dish.  Beat the pudding with 1 cup milk & liquor until thickened & smooth.  Fold in the whipped topping.  Coarsely chop the remaining cookies & fold into the mixture.  Top the cookie mixture & refrigerate 2 hours.  (Green food coloring can be added to whip mixture, if desired.)
