GAZPACHO SOUP (GREEN)

INGREDIENTS:

bullet4 green onion, cut in large pieces
bullet3 ribs of celery, cut in large pieces, reserve the leaf's
bullet1 cucumber, seeded & cut in large pieces
bullet1 green bell pepper seeded & cut in large pieces
bullet1 cup green seedless grapes + extra grapes cut in half for garnish, if desired
bullet1/4-1/2 cup chopped cilantro (or 1/4 cup each of cilantro & parsley)
bullet2 Tbsp fresh lime juice
bullet1 Tbsp green pepper sauce
bullet1/4 tsp salt
bulletPepper to taste
bullet1 cup white grape juice
bullet1 LB sweet Italian or polish sausage, optional

DIRECTIONS:  Boil or grill sausage until cooked then slice into thin rings & place on paper towel to drain excess fat & cool.  Combine onion, celery, cucumber, bell pepper, grapes, cilantro, lime juice, pepper sauce & salt in food processor.  Process just enough to combine but still a bit chunky.  Pour in white grape juice & continue to process long enough to blend.  Pour into large bowl, cover & refrigerate until cold.  When ready to serve top individual bowls with sausage, extra grapes  & celery leaf's.

SERVINGS:  4                                        TIME:  30 minutes plus chill time

SERVING TIPS:  Good additions include finely chopped jalapeno peppers & top with sour cream.  French bread or rolls are almost essential.  More gazpacho soups.
