FRUIT COMPOTE

TOOLS YOU WILL NEED:  Kitchen knife, measuring cup & spoons, large sauce pan, wooden spoon, bowl or cup for storage of syrup, large bowl for storage of fruit, serving dishes.

INGREDIENTS:

bullet3/4 cup water
bullet1/2 cup sugar
bullet2 tsp lemon juice
bullet1 piece of lemon peel
bullet1/2 tsp rum or vanilla extract
bullet1 pineapple, peeled & cored, cut to 8 slices
bullet2 mangos, peeled & pitted, cut to total 8 pieces
bullet3 bananas, peeled, cut to total 8 diagonal pieces

DIRECTIONS:  In a sauce pan combine water with sugar, lemon juice, peel & extract.  Bring to a boil then reduce heat & add fruit.  Cook at very low heat 5 minutes.  Pour syrup into a cup.  Remove lemon peel & cool fruit 2 hours.  Arrange fruit in individual serving dishes & pour a few teaspoons of syrup over it.  Serve with sour cream if desired.
