FRUIT CAKE
INGREDIENTS:
 | 3 cups nuts |
 | 3 cups pitted dates |
 | 1 jar (8 oz) maraschino cherries, drained, juice reserved |
 | 1 1/2 cups all-purpose flour |
 | 1 1/2 cups granulated sugar |
 | 1 tsp baking powder |
 | 1 tsp salt |
 | 4 eggs (egg beaters ok) |
DIRECTIONS: Combine nuts, dates &
cherries in bowl, adding dry ingredients mixing well. Beat eggs with
cherry juice & add to bowl. Mix about 2 minutes. Pour into 8 x 4
inch greased loaf or small bundt pan, bake at 275 F for 1 1/2 hour.
