FRUIT CAKE

INGREDIENTS:

bullet3 cups nuts
bullet3 cups pitted dates
bullet1 jar (8 oz) maraschino cherries, drained, juice reserved
bullet1 1/2 cups all-purpose flour
bullet1 1/2 cups granulated sugar
bullet1 tsp baking powder
bullet1 tsp salt
bullet4 eggs (egg beaters ok)

DIRECTIONS:  Combine nuts, dates & cherries in  bowl, adding dry ingredients mixing well.  Beat eggs with cherry juice & add to bowl.  Mix about 2 minutes.  Pour into 8 x 4 inch greased loaf or small bundt pan, bake at 275 F for 1 1/2 hour.

SERVINGS:  1 cake                               TIME:  1 hr 45 minutes
