FRIED RICE

INGREDIENTS:

bullet1/4 cup oil
bullet3 cups cooked rice
bullet1/4 cup red bell pepper, finely chopped
bullet4 green onions, finely chopped
bullet1 1/2 Tbsp soy sauce
bulletSalt & pepper to taste
bullet3 eggs, well beaten
bulletSnow peas, blanched, to taste, about 1 cup
bullet1 tomato, finely chopped, optional

DIRECTIONS:  Heat oil in a large, heavy skillet, add the rice & cook until slightly browned stirring frequently.  Add the onion & bell pepper, continue to cook, stirring often, for 2-3 minutes, add soy sauce & tomatoes, cook 1-2 minutes.  Separate the rice for a large opening in the center.  Add the eggs to the pan & cook until well scrambled.  Mix egg with the rice mixing well.  Add the snow peas & cook 1 minute more, salt & pepper to taste.
