INGREDIENTS:
DIRECTIONS: Heat oil in a large, heavy skillet, add the rice & cook until slightly browned stirring frequently. Add the onion & bell pepper, continue to cook, stirring often, for 2-3 minutes, add soy sauce & tomatoes, cook 1-2 minutes. Separate the rice for a large opening in the center. Add the eggs to the pan & cook until well scrambled. Mix egg with the rice mixing well. Add the snow peas & cook 1 minute more, salt & pepper to taste. SERVINGS: 4 TIME: 30 minutes FRIED RICE |
